Pumpkin Seed Muesli With Natural Yoghurt

Pumpkin seeds are a great source of protein and are full of nutrients including Vitamin E, Vitamin K, Iron and Zinc so save them after you’ve made those Halloween pumpkin faces!

This recipe is very much a personal taste so you can vary the ingredients to suit your taste but this is my version:

Ingredients:Pumpkin Seeds
15g (handful) rolled oats
2 dried apricot, chopped
1 tbsp raisins
1 tbsp pumpkin seeds
4 walnut halves, chopped
4 hazlenuts
4 almonds
2 tbsp of natural, no added sugar, whole yoghurt OR
Splash of milk

Method:
This bit is quite simple! Put it all in a bowl, mix and enjoy!

Tips:

  • Using fresh fruit is so much better but if you want to make a batch up for the week then use dried for better storage.
  • If you like your muesli a bit sweeter then add a teaspoon of honey with the yoghurt (where possible use locally produced honey)
  • You can add pumpkin seeds to most things – I like them added to porridge, fruit and yogurt and in homemade bread pudding and flapjacks!
  • Try using toasted buckwheat for an alternative to oats (see the related article below by PT Gen)
