2 eggs
1 tsp dried mixed herbs
1 handful spinach roughly chopped
Seasoning to taste
What to do:
- Mix all the ingredients well in a bowl or jug
- Pour into a frying pan (if non-stick you may want to use a little butter or oil)
- Fry on a medium heat until it is almost cooked
- Fold in half and cook both sides for a minute or two until fully set
- Serve with a handful of spinach
Tips:
- For a little extra flavour, fry a little onion, garlic or chilli in the pan before adding the egg mixture
- For a lighter snack just use one egg (or use more eggs for a large/family size!)
- Other ingredients include mushrooms, ham, peppers (fry off before adding the eggs) or cheese which can be added just before you fold
